The Commissary Blend is currently pre-blended 50/50, meaning the green coffees are combined before roasting. While post-blending can offer more clarity and complexity, pre-blending allows us to build greater uniformity, structure, and balance in the cup.
We roast this coffee with maximum extraction and cooked sweetness in mind, extending both the Maillard and development phases without pushing too dark or risking tipping. The result is a balanced espresso that rings with sweetness, body, and consistency.
The coffees in this blend are chosen to complement one another and function as a single unit. Our pairings are selected for stability and reliability, allowing the blend to remain consistent over time.
