La Colina Natural Guatemala

The La Colina farm, translated as “The Hill,” is named for the elevations of the land and the hill on which it is located.

We were delighted to connect with producer Antonio Medina. He is very warm and generous, and has truly built a positive cycle with his coffee. Through Primavera, a specialty coffee importer, he now obtains great premiums for his high-quality coffee, allowing him to completely rebuild his home, construct a new washing station, and create an expansive outdoor area where our sourcing team enjoyed a delicious lunch.

Rains were very erratic this year, leading to early bursting ripe cherries and difficulties in securing enough fresh water to wash all his coffee. Therefore, he experimented with this patio-dried natural process using 100% Caturra beans.

After tasting his washed coffees each year and not finding a place for them on our menu, we are thrilled to bring this naturally processed coffee to you.
