This is our second year buying this special prep lot from innovator Rodin Villatoro. First, he harvests and separates his highest altitude bourbon, growing well above 2000 meters above sealevel. This variety is knowfor its low yield in exchange for sweeter, more classic flavor profile. He then uses tanks to anaerobically ferment the cherries. This imparts a heightened intensity in the sweetness and acidity. The cherries are then put through their washing station, using a normal open air fermentation after depulping. There is a hidden step as well. The “must” or “mosto” of this lot is collected, grown, and used in Rodin’s Mosto process. This is the left over juices that are fermented from these cherries.
